With a fairly mild summer and our gardens producing an abundance of beautifully ripe homegrown fruit and vegies, many of you may find you have more produce than you can use for your daily meals. This is where the real beauty of growing your own food begins to shine - preserving.

While there may be loads of meals you can prepare with your abundant crops of tomatoes, basil, zucchini, cucumbers, chillies, eggplant and capsicum, there are many preserving techniques to help you enjoy your plentiful supplies later in the year - pickling, freezing, dehydrating and bottling just to name a few.

Tomatoes are easy. Making sauces, pastes and jams are on most home-growers’ radars. But simply storing your whole or chopped tomatoes can allow much more flexibility for many months to come. And if you have planted a good crop (say 20-30 plants) you will likely have enough to take you close or through to the next harvest in 2018-19.

Abundant herbs can be quickly transformed into pestos, whacked in the freezer and thawed as required throughout the year for cooking or snacking.

Zucchinis (and cucumbers) have well-earned reputations for overproducing, with most people choosing to let them rot on the ground after getting sick of too many zucchini meals over summer. How often, though, have you wanted to use zucchini or cucumber when they are not in the garden? Pickling both of these fruits in various ways is fantastic, as is making and freezing zucchini soups, slow-cooking or dehydrating zucchini chips and juicing both if you still have too many.

Eggplant and capsicum are always well enjoyed in many ways during the warm seasons, whether it’s cooked on the barbie, made into dips or just eaten raw. If enough is enough, then think about charring them and storing them in oil to be used all year as condiments and additions to a wide range of meals.

And as for chillies, well, if you have more than one good-size plant in this season you’ll likely be wondering what to do with the excess long after the plant has withered and died. Stringing chillies up to dry and hanging alongside your garlic in the kitchen will give you two very versatile and well-used meal additions. However, chilli pastes and sauces are a must-have in the fridge and cupboard for any spicy food-loving family. And depending on the variety of chilli you have grown, they will provide you with many spiced-up meals through the year.

Preserving your excess fruit is also a very rewarding activity. Although most stone fruit has finished now (fantastic for bottling), there are still the apples, pears, quince, figs and citrus you can have a go at.

Doing a bit of reading on preserving will give you limitless ideas on how to continue to enjoy your homegrown harvests over the coming year, and given a little time and creativity your pantry will be filled with many delicious alternatives for your already fabulous produce.

Have you seen dumped rubbish and found it untidy and disappointing but not known what to do? Have you discovered damage to council property but not known how you can help?

Frankston City Council is now encouraging residents to use the MyFrankston app to report such things. This free service also allows you to ask questions, report issues, or make payments (rates, pet registrations, infringements and permits) over the internet. Furthermore, you can report cases of illegal parking, roads or footpaths that need repairs, overgrown trees or bushes that are restricting footpath access, and shopping trolleys that have been discarded. And you can provide photographic evidence if needed all through the app itself.

After such reports are lodged, they are sent directly to the council where they are allocated to the correct department and promptly followed up.

It’s always exciting to see the continual swelling of fruit all around us, but there are many insect and animal pests around to spoil the party.

While certain “clean” sprays have their place, it is always better to try to remove insect pests by mechanical means - a good squirt with the hose or a squish with your fingers. Large outbreaks may warrant a spray response, but do keep in mind the populations of beneficial insects that will likely feast on your pest problem.

If you have small trees and are eagerly awaiting a limited harvest then netting is often required.  It is important when netting your trees that you are not restricting vegetative growth, as contorting and breaking new growth will in most cases reduce the following year’s harvest.

Often our healthy trees will put out a lot of new shoots, and pruning this new growth while it is young can encourage more fruitful trees next season; it’s also much easier to snip new soft growth than lignified woody branches. While you are in the orchard you may also want to remove any excess fruit at a young age to offer optimum nutrition and moisture to the rest of your harvest. You can do this simply by reducing the number of fruit per bunch or branch. For example, a bunch of five or six apples may be reduced to two or three. It is certainly worth experimenting with this.

So long as our irrigation systems are functioning well and our vegies and fruiting plants are heavily mulched, we may again enjoy a long growing and harvesting season this summer.

Mornington Peninsula Shire and Frankston City Council have joined their Casey, Cardinia and Bass Coast counterparts in supporting the Biosphere Reserve.

Taking in Frankston and the Mornington Peninsula as well as parts of the Bass Coast and Cardinia shires, the City of Casey and the unincorporated areas of French Island and Western Port, the Biosphere Reserve was nominated as a result of a community initiative and was designated under UNESCO’s Man and the Biosphere program in 2002 for its exceptional ecological values.

The reserve aims to preserve genetic resources, species, ecosystems and landscapes; foster sustainable economic and human development; and support demonstration projects, environmental education, training and research monitoring related to local, national and global issues of conservation and sustainable development.

Mornington Peninsula Shire Mayor Bev Colomb said a Memorandum of Understanding recognises the commitment of all parties involved to collaborate to achieve the common goals in the Biosphere Foundation Charter and respective council plans.  She said local government responded to community needs and had an opportunity to lead by building community awareness and encouraging sustainable behaviour through education in the way we care for the environment.

“The partnership is mutually beneficial, ensuring continuity and integration of programs and projects and improving the potential to achieve the sustainability objectives of each organisation,” Cr Colomb said.

Key projects undertaken by the Biosphere Foundation include teaching wise water use and providing the tools for water conservation planning; the Growing Connections project, which links fauna habitats across the reserve; the southern brown bandicoot protection project; protecting Western Port’s wetlands for migratory birds; and the Watson Creek catchment improvement project at Baxter.

Frankly Frankston speaks to Frankston Council urban designer Meghan Doherty about her work and how she sees the city changing over the next 20 years.

 

Could you tell us a bit about what you do at the council?

I provide urban design advice on proposed developments within the municipality. This may be for housing and apartment proposals, streetscape redevelopments, commercial development and even shop frontages. 

 

What types of areas/buildings do you work on?

Some public spaces (streetscapes etc) but the vast majority is housing and commercial development. This extends to individual housing, unit development, apartment design, mixed-use developments, even aged care and childcare developments.

 

How important is sustainable design?

Frankston City Council has a proud history with sustainability initiatives and won the Australian Sustainable Cities Award in 2015. Sustainability in any form of design is crucial for a variety of social, environmental and financial reasons; the implications of sustainable (and unsustainable) design extend well beyond our immediate community. Urban design has numerous sustainability considerations including energy performance, water resources, stormwater management, transport, waste management and the urban ecology. Design longevity is also a key indicator for sustainability, so how our spaces can adapt to change is also important. 

 

What’s your favorite part about your industry?

I love the collaboration, whether it is between departments, external professionals or the community – the diversity in my projects ensures I’m never bored and the work is never ‘stale’. Being able to see the physical results of your work is also very satisfying, especially when you can see the benefits reflected in the community.

 

What/who would be your favourite design/designer?

I don’t have a favourite design or designer per se but I’ve always had a fascination for coastal designs and projects that manage to integrate with the landscape rather than use the landscape to ‘grandstand’. Paula Hayes was one of the first designers who caught my attention and I still think her work is fantastic.

 

How do you see Frankston changing over the coming years?

It’s so exciting to be working in Frankston at the moment. There’s a lot of change happening; some big infrastructure developments are giving Frankston a fresh start and new vitality and the results can already be seen. Frankston has so much potential as a seaside city so it will be interesting to see the change and push for revitalisation over the next 20 years, including upgraded streetscapes, new buildings and new public spaces. 

 

What makes urban design attractive in your eyes?

Good urban design comes in all shapes and sizes but is generally well considered and responsive to its context.

 

What’s your preferred style of design?

I prefer highly considered, fine-grain design – often with a quirky or playful detail.
